Ingredients
6 skinless chicken breasts - sliced
2-3 lemons
⅓ cup olive oil
1 TBS Chicken Seasoning Salt
1 tsp Honey
½ tsp Spanish Paprika
Preparation:
Pour all the Marinade ingredients f into a bottle OR Ziplock packet and combine
Place the chicken pieces in a ziplock bag and squeeze all the air out and massage well to coat evenly. Leave to marinade for 30min - 4hours
When ready to cook: Switch stove on to medium - high heat and coat pan with small drizzle olive oil
Season the chicken strips with salt & pepper & place 8-10 mini fillet pieces OR 3 -4 breasts in pan 4-5 min → golden
Turn once & repeat for another 4-5 min
When cooked, remove from heat, and add the sauce to bubble through! This is the lemony sauce to drizzle over the rice - the best part :)
SWITCH OFF the STOVE
Set aside and cover with tinfoil till serving / reheating to retain moisture
